I’ve already written about our Friday night pizza nights and how we make our homemade pizza. This last Friday we made this BBQ chicken pizza.
It couldn’t be easier. Make the crust and put your favorite BBQ sauce on it. Chop a chicken breast into bite-size pieces and brown it in oil on the stovetop, or grill it (don’t cook it all the way, since it will continue cooking on the pizza and you don’t want it to dry out). Add thin slices of mozerella cheese over the chicken, then sprinkle everything with chopped red onion and cilantro. Delicious hot, and the leftover slices (wrap individually in tin foil) were incredible as a meal two days later!
